Fresh herbs taste great and are perfect to spice up home cooked meals. However, often you’ll be buying a bunch of herbs for a specific meal and will end up using only a small amount of the herbs, which leaves you with a lot of leftover herbs. We have 7 ideas for how to use your leftover herbs.
1. Make homemade pesto
If you have a lot of leftover herbs (for instance basil), pesto is the ideal way to use it all. It’s easy to make, tastes delicious and fits well with so many dishes.
2. Freeze herbs with water or oil
Whenever you have too many herbs to use instantly, simply freeze your fresh herbs in ice cube trays with either water or oil. This way you will always have ready-to-cook flavour cubes at hand for your next meal.
3. Blend into smoothies
If you are a smoothie person, we highly recommend adding some fresh herbs in your smoothie mixer. It will give some extra great flavour to your morning or afternoon smoothie.
4. Drink with water
It can be difficult to remember to drink enough water during warm summer days. To get a bit of variety to the taste, we recommend infusing your water with fresh herbs, lemon or lime.

5. Dry them and make spice blends
Another good way to use your leftover herbs is to dry the herbs and make spice blends. Simply group them in small bunches, tie them together and hang upside down in a cool room. Once they are dry, you can crumble and store them in jars as spice blends.
6. Make flavoured butter
Bring some flavour into your butter by simply mixing fresh herbs (and maybe garlic if you like) and butter in a food processor and put it into the fridge until it’s chilled. It’s a great addition to barbecues, bread and roasted vegetables.
7. Make salad dressing
Every salad needs a great dressing so why not bring fresh herbs into your salad dressing? All you need to do is chop your herbs finely and mix them into your salad dressing for delicious flavour.
